Apple and Blue Cheese Grilled Sandwiches

Good God. Blue cheese and apples? Are you kidding? Holy fuck! Come on, don't tell me you hate blue cheese. If you don't like it, go away. Now if you're like me, and you absolutely love the stuff, you'll love this sandwich. The sweetness of the apples and the tangy cheese go together like a finger in a nose. Who's finger is that in your nose?!?

Sliced Sourdough or French Bread (relatively thin, easier to grill)

Thinly sliced apple of choice (or pears!!)

Crumbled Blue Cheese of choice

Butter, room temperature

Walnuts (Optional)

Arugula (Optional)

Lightly butter one side of each slice of bread. If you don't know how to make grilled cheese yet, well, I can't really help you out there, you silly monkey. Hire me, pay me a buttload of cash, and I'll gladly make these for you. Melt a bit of butter in a skillet, and place a slice of bread butter side down into the skillet over medium high heat. Add nuts, cheese, arugula, and apples, and top with the other piece of bread, this time butter side up. Flip when the bread turns to a golden to deep brown.

I'm not sure what all you grilled cheese experts think, but I tend to press down a bit on the sandwich while it's cooking, to get it to crisp and heat through the sandwich. It flattens and crisps as it cooks. Panini sandwiches are made with presses, kind of like a George Foreman Grill, as an example of why I like the idea. I'd rather use the stove, myself, not that Foreman crap. Sorry George, you were a better boxer than you are cook! But you're one hell of a salesman, according to your now much-more-rich-ass.

I suggest you use less ingredients more than more -- that way everything can get heated through evenly and the cheese can melt and you get a nice delicate crispy flavor.

I like to slice mine diagonally. Like Mom did for me. I love you Mom!
