Grilled Peaches with Balsamic Reduction
I'm really not that great with sweets, unfortunately, so my desserts tend to be simple. The thing is, everybody looks forward to your desserts, so this one's easy as all hell and it's also impressive. See a trend yet? Easy, impressive? Sexy? Balsamic vinegar reduces down to a sweet syrup, without so much of the acidic taste of the vinegar. This is a great summer dessert, and fucking awesome.
Fresh peaches sliced into halves, pits removed
Neutral oil like canola or vegetable
Any kind of balsamic vinegar (dark preferred)
Whipped cream (optional)
Mint for garnish
Pour some balsamic vinegar into a saucepan and put it on medium and let the vinegar boil down to a nice thick syrup, about half the volume of the original volume. Take it off the heat but don't let it sit too long, you want it to stay warm.
In the meantime, heat your grill up to a nice medium heat, and prepare the grill with vegetable oil or canola oil so the fruit doesn't stick. Let the fruit heat up for about ten to twelve minutes per side so you get nice caramelization, and flip the fruit when it looks good.
Serve the fruit either in full halves or sliced, and drizzle the balsamic vinegar reduction over the grilled fruit, with a bit of sweetened whipped cream on the side. Garnish with a few leaves of mint and you're all set, bitch!
